Butterscotch Muffins
Ingredients:
2 Cups all-purpose flour
1 Cup sugar
1 package (3.4 oz.) instant butterscotch pudding mix
1 package (3.4 oz.) instant vanilla pudding mix
2 tsp. baking powder
1 tsp. salt
1 Cup water
4 eggs
3/4 Cup vegetable oil
1 tsp. vanilla
1 package butterscotch chips
Topping:
2/3 cup packed brown sugar
1/2 cup chopped pecans
2 tsp. ground cinnamon
Directions:
In a bowl, combine flour, sugar, pudding mixes, baking powder, and salt.
Combine water, eggs oil and vanilla.
Stir into the dry ingredients just until moistened.
Stir in butterscotch chips.
Fill muffin cups 2/3 full
Combine topping ingredients and sprinkle of batter in pan.
Bake at 350 for 15-20 minutes or until a toothpick comes out clean.
Cool for 5 min before taking out of pan
Makes 12 muffins
