Corn, Tomato, Onion, Basil and Blue Cheese Salad


Ingredients:

32 oz bag of frozen corn thawed or 8 ears of fresh corn grilled and kernels removed
1 pint of cherry tomatoes
1 sweet onion chopped
8 oz. blue cheese
1/4 cup of chopped fresh basil
1/4 cup rice vinegar
1 tsp. sugar
salt and pepper to taste
1/2 cup olive oil

Directions:

Combine corn, onion and tomato in large bowl.
Combine vinegar, basil, sugar, oil and salt and pepper
Add dressing to corn mixture, mix to coat
Can make ahead
Add blue cheese just before serving
Garnish with Basil (optional)

Delish!
